What You'll Do

As an Executive Sushi Sous Chef, you’ll be a vital member of our back-of-house team and report to the Executive Chef at Virago. Prepare and execute high-quality sushi with precision, speed, and attention to detail while upholding the highest food safety and sanitation standards. Serve as a hospitality ambassador by creating welcoming, memorable Guest experiences. Collaborate with a team-first mindset, support daily kitchen operations, and contribute to a positive, high-performance culture focused on excellence, growth, and continuous improvement.

Your Responsibilities Will Include:

• Prepare and execute high-quality sushi and Japanese cuisine according to established recipes and standards
• Uphold all food safety, sanitation, and health regulations at all times
• Maintain a clean, organized, and efficient sushi workstation
• Demonstrate proper fish cutting and sushi rolling techniques with precision and consistency
• Prioritize Guest experience by delivering welcoming, professional, and engaging service
• Collaborate with kitchen and front-of-house teams to ensure smooth service execution
• Execute orders accurately and efficiently while maintaining speed and attention to detail
• Support opening, running, and closing duties to set the team up for success
• Communicate effectively with leadership and teammates and assist where needed
• Contribute to a positive, team-first culture by mentoring others and embracing continuous improvement

What We're Looking For

• 2+ years experience in sushi as a Sous Chef or similar leadership role
  • Strong knowledge of sushi preparation, fish cutting, and rolling techniques (or eagerness to master them)
• Must be able to lift and maneuver up to 50 pounds
• Must be able to work in a standing position for a long period of time
• Commitment to food safety, sanitation, and quality standards
• Team-first mindset with the ability to collaborate across roles and departments
• Professional, positive attitude with poise under pressure in a fast-paced environment
• Strong work ethic with attention to detail, speed, and accuracy
• Effective communication skills and openness to feedback
• Growth-oriented mindset with a desire to learn, improve, and take on new challenges
